Vegan Thumbprint Cookies with @ItsTheVeganBean

 

These Vegan thumbprint cookies are delicious on their own, but you can upgrade them with a topping of Vegan Protein Gummies. Thanks to the talented Clara of Its The Vegan Bean - head to her blog or check her out on Instagram for more plant-based foodie inspo.

Ingredients
  • 1 can white beans (drained and rinsed)
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • Dash of salt
  • 1/4 cup water
  • 1/3 cup stevia
  • 2 tbsp maple syrup
  • 3/4 cup oat flour
  • Herbaland protein gummies of choice
Directions
Preheat the oven to 375 and line a cookie sheet with parchment paper. In a high-speed blender or food processor, combine all ingredients except for the gummies and blend until a smooth dough forms. Drop by heaping spoonful onto your cookie sheet and smooth the edges of each ball of dough. In the centre of each ball, press one and a half Herbaland gummies to form a heart shape. Bake for 12-15 mins until golden brown, and enjoy!
