Herbaland Foodie: PB&J Protein Blondies

Equal parts delicious and packed with your daily macros (just like our Herbaland Protein gummies!) These PB&J Protein blondies are sure to be a hit with your kids, your coworkers, or your friends at the gym!


Ready to make these delicious treats from the kitchen of @conniekyleung? Here's what you'll need:

I N G R E D I E N T S :

  • 1 cup — pumpkin puree⠀
  • 3 scoop — vanilla protein powder⠀
  • 1/4 cup — coconut sugar ⠀
  • 1/3 cup — almond mylk⠀
  • 2 — flax egg⠀
  • 1 tsp — baking powder ⠀
  • 1/2 tsp — baking soda⠀
  • 1 tsp — vanilla extract⠀
  • PB drizzle: add water until it reaches to a thin consistency⠀
  • top with: black grapes (halved)⠀

D I R E C T I O N S:

  1. Preheat the oven to 325F⠀
  2. Prepare the flax egg (1Tbsp flax meal + 3 Tbsp water) and let it sit for 15 minutes⠀
  3. In a small bowl, mix the protein powder, baking powder, and baking soda⠀
  4. In a separate bowl, whisk the pumpkin puree, coconut sugar, almond mylk and the flax egg⠀
  5. Pour the batter into a 9x9 square pan and on top, place the halved-black grapes facing down ⠀
  6. Bake for 25 minutes⠀
  7. Let the brownie cool down and drizzle it with the PB drizzle⠀

P R O  T I P:

  • For a chocolate version, use 2 scoop chocolate protein powder + 1/2 cup cocoa⠀
  • Try different types of fruits such as apples or pear - but make sure the fruit does not contain too much juice to avoid a soggy brownie⠀
